Our recipes for chai tea and sweet Indian desserts are guaranteed to spark your appetite and drive you nuts. (Did you know that chai means "tea" in many parts of the world?)
Chai and Indian SweetsChai ingredients (per serving): 1/2 c. half and half 1 pod cardamom 1/4" cinnamon stick 1/4" fresh ginger 1 clove 1-2 whole black peppercorns 1 c. water 1 black tea bag (Darjeeling is preferred) sugar to taste small sieve
1. In a small saucepan, add half and half, spices, water and tea (figure A). Bring to a boil and allow mixture to simmer for 3 to 5 minutes (figure B).
2. Remove the saucepan from the heat and pour the chai mixture through a small sieve into a mug. Discard boiled spices. Sweeten with sugar to taste.
3. Serve with a platter of dried fruits and nuts for the perfect end to an Indian meal. Suggested delicacies include the following:
- cashews
- almonds
- dates
- dried apricots
- dried mangos
